Black Beans and Quinoa

Remember when I used to cook? I don’t either. I’ve been too busy going to happy hour and lusting after Wangs. Luckily, my angel Irene gave me the shove I needed to put together some ingredients and take pictures. She’s in South America so I attempted South American fare.     I’m making this tonight. In Peru TH had quinoa soup. Quinoa is pretty big down there. People pinned the heck out of this recipe. Go you!

    I’m a fan of quinoa bowls. You can basically throw any flavors in there and it comes together. Usually I roast tomatoes, zucchini and some other veggies and toss it with olives, feta, lemon and olive oil but this version looks super tasty.

  6. too funny, I cooked something similar this week! but instead of bell peppers and jalapenos I used corn, tomatoes and avocado and added some spicy shrimp on top – yum! It was also amaaaazing cold the next day!
