Cure Me

I haven’t attempted any creative recipes lately, which explains the lack of recipe posts. To say I’m currently uninspired is an understatement. So I was thinking you could help cure my bland state of mind. Please give me some of your favorite (vegetarian friendly) recipes. Pretty please!

    My “VERY Green Salad with a bit of Bleu” is dee-licious!

    A bowl of your favorite greens-spinach, butter lettuce, kale, romaine-all
    1 Granny Smith apple, chopped
    1 Cucumber, diced
    1 bunch green onions, sliced
    1 cup Edamame, shelled
    1 handful fresh French green beans, sliced to bite size on a diagonal
    1 generous toss in of Maytag Bleu cheese crumbles

    Add your favorite dressing and enjoy! Green Goddess dressing would be the most appropriate, but with the bleu cheese crumbles, something less calorie laden may be a better choice.

  5. Oh so funny, I just started a gluten-free vegan diet this week and have been trying a bunch of vegetarian dishes. Making stir fry right now, in fact. Not sure if you’d be interested in those types of recipes but if you are just let me know. I’ve been pleasantly surprised with how good it all isπŸ™‚ xoxo

    last night I had a fab salad with spinach, goat cheese, rasins and roasted squash on top that wilted the salad a little bit. Then I topped it with the spicy peanut dressing from Trader Joes… yuuummm!
