Roasted Eggplant Dip

I’m not a huge fan of eggplants, but we got a couple in our CSA box so I threw together this easy dip/spread with lots of garlic and chickpeas. I made it spicy so it appealed to my taste buds. It’s good as a leftover too. I spread it on pita, added some lettuce, tomato and cucumber and called it lunch.

  4. You always make me want to be so healthy! Now I feel bad that we’re headed to a comfort food restaurant on Saturday. But I promise the food and wine will be worth it.

    Love eggplant. And love your photos more. I swear if you ever want to branch out professionally I have a client looking for a food photographer. ;o)

    Eggplant can be dry and when sauteing can suck up an entire bottle of olive oil… so I agree with Dawn, depending on how it is prepared can be delish. Add some tomatoes, burrata, and spice, or chickpeas, garlic and spice and I’m yours!

  7. I have a love/hate relationship with eggplant. I think it all depends on how it’s prepared. I do love a Greek eggplant dip called Melitzanosalata and this looks similar. Off to check out the recipe🙂

  13. sabra ~ i’m not a fan of eggplant either, but this looks delish!! i think if it’s prepared the right way {eggplant} it can be really good {i.e. lots of olive oil and browned nicely}.
